Cookies are defined functionally as "favorite food used other than meals" and favorite food give energy to our life.
Western-style cakes were developed as part of meals. Now it substitutes meals.

Cookies are divided as biscuit, chocolate and bread but let's mention the etymology and meaning of cookies.
The word of biscuit was originated from France that has the meaning of baking twice. Now the biscuit in France is the sponge style cookies and cookie-shaped one is called as petit pour secs.
Biscuit of U.S.A. is the medium form between cake and bread. Cookies are flat one with much sugar and fat milk. In England, all cookies are called as biscuit.

Biscuit cookies are made by using baking powder for swelling of dough and if use yeast, it's cracker.

Europeans like hard cookies and Americans prefer soft ones. In Korea, there are hard and soft together, until now people prefer to hard cookies.

But preference on soft cookies is raised gradually. Currently, instant cookies shops treat it because freshness and maintenance are difficult as circulation period of soft cookies is short (about 10days). Change in quality and taste is more severe than hard cookies.
